Metairie Cabernet Sauvignon
Location: Corbières Region, near the city of Carcassonne in the South of France.
Terroir: Selected plots in the Aude on gravel with good water retention.
Age of the vines: 15 to 20 years
Grape variety: 100% Cabernet Sauvignon
Ripening moderately late the lauded Cabernet-Sauvignon is to be found in all the great red wine producing regions – with the exception of Burgundy. It produces wines with deep colour and rich body and tannin which always bode will for longevity.
Vinification: Machine harvesting and crushing prior to 15 days fermentation in glass-lined cement vats; light filtration at bottling.

Color is intense ruby. Bouquet is fruity; blackcurrant and blackberry aromas, spices and green pepper. Palate is supple and balanced; logical follow-through from the bouquet.
Poultry in sauces; firm cheeses. Serve at 59-61°F.
Ageing potential: 4 to 6 years but will drink well soon after bottling
