Location: Deeply rooted in the heart of the Entre-deux-Mers, the Despagne Family is making waves in Bordeaux. Famous for their know-how and their dynamism, many of their green initiatives have been awarded.

Terroir: Silica, limestone.

Age of the vines: 18 years old

Yields: 10 to 12 bunches per vine

Grape varieties: 34 % Sauvignon Blanc, 33 % Sémillon, 33 % Muscadelle

Vinification: Slow pressing at low temperature in pneumatic press. Fermentation in stainless-steel vats during 20 to 30 days at 18°C and 1% in barrel.

Type of ageing: Ageing on fine lees until bottling. Stirring of the lees twice a week for 3 months.

Tasting notes:

Yellow-green color is characterized by a nose of citrus fruits and an exotic touch of passionfruit. A full entry on the palate followed by a soft and crunchy impression on the mid-palate, lingering in the finish.

Food Pairing: Enjoy it as an aperitif or with shellfish, fish or chicken.
